Horta Vrasta is a traditional Greek dish featuring a medley of wild boiled leafy greens such as dandelion, curly endive, and chicory, lightly seasoned with olive oil, lemon juice, and salt. This simple, wholesome side is both nutritious and refreshing, making it a staple in Greek cuisine.

Ingredients

Greens

  • 2 lbs wild leafy greens (e.g. dandelion greens, curly endive, amaranth leaves, chicory)

Seasonings

  • Salt to taste (plus 1 teaspoon for boiling water)
  • 3 tablespoons olive oil (or more, to taste)
  • 1 lemon, juiced (use as much as desired)

Instructions

  1. Prepare the Water: Bring a large pot of water to a boil and add a teaspoon of salt to it. This will season the boiling water for the greens.
  2. Clean the Greens: Fill a large bowl or clean sink with water and submerge the leafy greens. Swirl them around gently to loosen dirt. Change the water repeatedly until it runs clear. Trim away any thick or tough stems from the greens to ensure even cooking.
  3. Boil the Greens: Add the cleaned greens to the boiling salted water, then reduce the heat to medium. Boil them for about 20 minutes or until the stems become tender. Stir occasionally to keep all the leaves submerged and cook evenly.
  4. Drain: Once tender, drain the greens thoroughly and transfer them to a serving bowl.
  5. Season and Serve: Drizzle the boiled greens with olive oil and freshly squeezed lemon juice to your liking. Add additional salt if desired, toss gently, and serve warm or at room temperature.
