Chicken

  • 3 eggs, beaten
  • ¾ cup all purpose flour

  • Avocado oil, or other light oil for frying

Honey Sauce

  • ⅓ cup low sodium soy sauce, or Tamari sauce
  • ½ cup honey
  • 1 ½ tablespoons sesame oil
  • 1 ½ tablespoons rice wine vinegar
  • 1 ½ tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 ½ tablespoons sesame seeds, for garnish
  • 2 tablespoons green onion, finely chopped

Instructions

  1. Prepare the chicken: Start by cutting the chicken breasts into 1-inch cubes for even cooking. In a large bowl, beat the 3 eggs. In a separate large mixing bowl, combine the all-purpose flour, cornstarch, garlic powder, and 2 teaspoons of kosher salt.
  2. Coat the chicken: Dip the chicken pieces into the beaten eggs, ensuring they are fully coated. Then, dredge them in the flour and cornstarch mixture, pressing lightly so the coating sticks well to the chicken pieces.
  3. Heat the oil: In a deep skillet or wok, add enough avocado oil or another light oil to a depth of about 2 inches for frying. Heat the oil over medium-high heat until it reaches approximately 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of batter into the oil; it should sizzle and rise to the surface immediately.
  4. Fry the chicken: Carefully place the coated chicken pieces into the hot oil in batches without overcrowding the pan. Fry for about 5-7 minutes, turning occasionally, until the chicken is golden brown and cooked through. Use a slotted spoon to remove the chicken and drain on paper towels. Sprinkle with the remaining ¼ teaspoon kosher salt while still hot.
  5. Make the honey sesame sauce: In a small saucepan, combine the low sodium soy sauce (or Tamari), honey, sesame oil, rice wine vinegar, brown sugar, and minced garlic. Cook over medium heat, stirring frequently, until the mixture starts to simmer and the sugar dissolves completely, about 3-5 minutes. Let the sauce cook for a minute more until slightly thickened.
  6. Combine chicken and sauce: Transfer the fried chicken pieces into a large bowl. Pour the warm honey sesame sauce over the chicken and toss gently but thoroughly to coat each piece evenly.
  7. Garnish and serve: Sprinkle the coated chicken with the sesame seeds and finely chopped green onions. Serve immediately while the chicken is crispy and the sauce is warm and sticky.
