Ingredients

Salmon and Seasoning

  • 1 ½ lbs. salmon, cut into 4 filets (skin on or off)
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon mustard powder
  • ¼ teaspoon onion powder
  • ½ teaspoon brown sugar
  • 1-2 tablespoons peanut oil (or vegetable oil)

Sauce

  • ½ cup beef broth
  • ½ cup chicken broth
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 3 tablespoons honey
  • 3 tablespoons packed brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon hot sauce (optional)
  • ½ teaspoon ground ginger
  • ¼ teaspoon sesame oil
  • 2 tablespoons cornstarch
  • Pinch of red pepper flakes

Vegetables and Sides

  • 2 cups broccoli florets
  • 3 cups cooked rice (any kind)
  • 1 tablespoon peanut oil (or olive oil) for broccoli sautéing

Instructions

  1. Prep Work: Preheat your oven to 375°F. Gather all ingredients and seasonings. Combine the salmon seasonings—smoked paprika, salt, pepper, mustard powder, onion powder, and brown sugar—in a small bowl.
  2. Prepare the Sauce: In a medium measuring cup with a spout, combine beef broth, chicken broth, minced garlic, soy sauce, honey, brown sugar, apple cider vinegar, hot sauce (if using), ground ginger, sesame oil, cornstarch, and red pepper flakes. Ensure the ingredients are cool to avoid prematurely activating the cornstarch. Set aside in a cool spot until needed.
  3. Sauté the Broccoli: Heat 1 tablespoon of oil in a 12-inch oven-safe skillet over medium-high heat. Add the broccoli florets and cook for about 4 minutes until slightly softened, adding a splash of oil if needed. Remove from skillet and set aside.
  4. Season the Salmon: Pat the salmon filets dry with paper towels. Sprinkle the prepared seasoning mixture evenly over each filet, gently pressing the spices onto the surface.
  5. Sear the Salmon: Heat oil in a large skillet over medium-high heat. Place salmon filets skin-side down (if skin on) and sear for 3 minutes until the bottom is nicely browned.
  6. Add Sauce and Simmer: Reduce heat to medium. Pour the prepared sauce into the skillet and bring it to a boil. Let it thicken slightly, then reduce heat to medium-low and baste the salmon with the sauce for 2 more minutes as it cooks.
  7. Add Broccoli Back: Return the sautéed broccoli to the skillet around the salmon.
  8. Oven Bake: Transfer the oven-safe skillet to the preheated oven. Bake for 7 minutes. Then switch oven to a low broil at 400°F and broil for up to 2 minutes to caramelize the glaze on top. Watch carefully to avoid burning.
  9. Rest the Salmon: Remove skillet from oven. Spoon extra glaze over the salmon and allow it to rest for 5-10 minutes—this lets the salmon finish cooking gently and reach an internal temperature of 145°F.
  10. Serve: Plate the salmon and broccoli with cooked rice for a complete meal. Spoon any remaining glaze from the skillet over the salmon for extra flavor and enjoy.

Notes

  • Use any rice variety you prefer such as jasmine, basmati, or brown rice. For best results, rinse rice before cooking and use a rice cooker or stovetop method with a 1:2 rice-to-water ratio.
  • Salmon skin can be left on or removed based on preference; skin-side down searing helps achieve a crispy texture.
  • Adjust the hot sauce amount or omit it to control the spice level.
  • Be sure to watch the broiling step closely as the glaze can burn quickly under high heat.
  • Resting the salmon is crucial to seal in juices and reach a food-safe temperature.
