Ingredients

Steak and Marinade

  • 1 ¾ pounds top sirloin steak, cut into 1 ¼-inch cubes
  • ⅓ cup low sodium soy sauce
  • ¼ cup canola oil
  • 3 tablespoons honey
  • 1 tablespoon minced garlic (about 3 cloves)
  • 2 teaspoons chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon ground black pepper

  • 1 red bell pepper, cored and cut into 1 ¼-inch pieces
  • 1 yellow or orange bell pepper, cored and cut into 1 ¼-inch pieces
  • 8 ounces whole baby bella mushrooms, halved if large
  • 1 small red onion, cut into 1 ¼-inch cubes

Instructions

  1. Marinate: Place the top sirloin steak cubes in a large zip-top bag or a medium bowl. In a separate bowl, whisk together the low sodium soy sauce, canola oil, honey, minced garlic, chili powder, ground cumin, and ground black pepper. Pour this marinade over the steak, tossing to thoroughly coat all pieces. Seal the bag or cover the bowl and refrigerate for at least 1 hour and up to 8 hours to allow flavors to penetrate.
  2. Preheat Grill: About 15 minutes before cooking, preheat your grill to medium-high heat, roughly 425°F. Make sure the grates are clean by scrubbing them with a grill brush.
  3. Assemble Skewers: Thread the marinated steak cubes onto skewers, alternating with pieces of red bell pepper, yellow/orange bell pepper, baby bella mushrooms, and red onion. Arrange the ingredients so they lightly touch but are not packed tightly together to ensure even cooking. Place the prepared skewers on a rimmed baking sheet for easy handling.
  4. Brush with Marinade: Using a brush, coat the assembled skewers on all sides with the remaining marinade. Discard any unused marinade after this step to avoid contamination.
  5. Oil the Grill Grates: Just before putting the skewers on, brush the grill grates with oil to prevent sticking and help achieve nice sear marks.
  6. Grill the Kabobs: Place the skewers on the hot grill. Cook for approximately 8 to 9 minutes total, turning every 3 minutes to brown and cook all sides evenly. The meat is done when it reaches an internal temperature of 140°F to 145°F for medium doneness, and the vegetables are tender and seared.
