  4. Arrange Bases: Place half of the cut circles on the prepared baking sheet—these will serve as the bases of the Vol-au-Vent cases.
  5. Make Pastry Rings: Using a 1.5-inch (3.5 cm) cutter, cut out the center of each of the remaining circles to create rings. Retain and bake the small cut-out centers alongside the cases to avoid waste.
  6. Assemble Cases: Lightly brush the edges of the base circles with beaten egg to help the rings adhere. Place one pastry ring on top of each base circle, gently pressing to attach.
