Ingredients

Meat & Vegetables

  • 1 tablespoon oil
  • 1 pound ground beef
  • 1 clove garlic, chopped
  • 2 onions, finely chopped
  • 2 medium carrots, finely diced
  • 2 sticks celery, finely diced

Gravy & Filling

  • ½ teaspoon salt
  • ¼ teaspoon ground paprika
  • Ground black pepper to taste
  • 2 tablespoons white flour
  • 2 tablespoons tomato paste
  • ⅓ cup red wine (or more beef broth if avoiding alcohol)
  • 1 cup beef broth
  • 1 cup frozen peas
  • 1 tablespoon finely chopped parsley
  • ½ teaspoon finely chopped thyme
  • 1 teaspoon finely chopped rosemary

Topping

  • 4 cups mashed potatoes
  • ½ cup shredded cheddar cheese

Instructions

  1. Prepare the Vegetables: Heat the oil in a large skillet over medium heat. Add the chopped garlic, onions, carrots, and celery. Sauté until the vegetables are softened and translucent, about 5-7 minutes.
  2. Cook the Ground Beef: Add the ground beef to the skillet with the vegetables. Cook thoroughly, breaking up the meat with a spoon, until browned and no longer pink, roughly 8-10 minutes.
  3. Season and Thicken: Stir in salt, ground paprika, and black pepper. Sprinkle the flour over the meat mixture and cook for another 2 minutes to remove the raw flour taste, stirring constantly.
  4. Add Liquids and Herbs: Mix in the tomato paste, then pour in the red wine (or extra broth if avoiding alcohol) and beef broth. Stir well to combine everything and bring the mixture to a simmer.
  5. Add Frozen Peas and Herbs: Stir in the frozen peas, chopped parsley, thyme, and rosemary. Allow the mixture to cook for about 5-7 minutes until thickened and heated through.
  6. Assemble the Pie: Preheat your oven to 375°F (190°C). Transfer the beef and vegetable filling into a baking dish and evenly spread it out.
  7. Top with Mashed Potatoes and Cheese: Spoon the mashed potatoes over the filling and spread it smoothly. Sprinkle the shredded cheddar cheese evenly on top.
