This recipe guides you through making light and fluffy homemade gluten free gnocchi using russet potatoes and a combination of gluten free all-purpose flour and potato starch. The gnocchi are soft, tender, and perfect as a base for your favorite sauces, providing a delightful gluten free alternative to traditional gnocchi.

Ingredients

Gnocchi Dough

  • 2 pounds russet potatoes
  • 1 egg
  • 1 tablespoon unsalted butter
  • ¾ cup gluten free all-purpose baking flour, plus more for rolling
  • ¼ cup potato starch
  • ½ teaspoon salt

Instructions

  1. Prepare the Potatoes: Boil the russet potatoes whole with their skin on until fork tender, about 30-40 minutes. Drain and let cool slightly, then peel and pass the potatoes through a ricer or mash until smooth.
  2. Make the Dough: On a clean surface, combine the mashed potatoes with the egg, unsalted butter, salt, gluten free flour, and potato starch. Gently mix until a soft dough forms. Avoid overworking to keep the gnocchi tender.
  3. Shape the Gnocchi: Divide the dough into smaller portions. Roll each portion into long ropes about ¾ inch thick, then cut into 1-inch pieces. Optional: Roll each piece over a fork to create ridges for sauce adherence.
  4. Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi in batches, avoiding overcrowding. When they float to the surface, cook for an additional 1-2 minutes. Remove with a slotted spoon and drain.
  5. Serve: Toss the cooked gnocchi with your favorite sauce, such as a butter sage sauce or tomato sauce, and serve immediately.

Notes

  • Use russet potatoes for best texture and starch content.
  • Do not overwork the dough to keep gnocchi light.
  • Add more gluten free flour if dough is too sticky, but sparingly to avoid tough gnocchi.
  • Gnocchi can be frozen before cooking; freeze on a tray then transfer to a container.
  • Cook gnocchi in batches to prevent sticking.
