This Homemade Doner Kebab recipe delivers a flavorful and juicy lamb-based kebab made easily in your oven. The blend of spices, yogurt, and olive oil tenderizes the meat, while baking it wrapped in parchment paper ensures it stays moist and develops a deliciously crisp exterior when finished. Perfect for serving in pita or bowls with fresh veggies and garlic sauce, this viral recipe offers an authentic taste of doner kebabs in your own kitchen.

Ingredients

Meat Mixture

  • 450 grams ground lamb (or any ground meat)
  • 1 grated onion (food processed into a paste with 1 tsp water)
  • 3 garlic cloves minced
  • 1 teaspoon salt
  • 1.5 teaspoons sweet paprika
  • 1 teaspoon oregano
  • 1/4 cup yogurt
  • 1 tablespoon olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the kebabs evenly.
  2. Mix Ingredients: In a bowl, combine the ground meat with grated onion paste, minced garlic, salt, sweet paprika, oregano, yogurt, and olive oil. Mix thoroughly until well incorporated.
  3. Divide Meat: Split the meat mixture into two equal portions to shape separately.
  4. Shape Meat on Parchment: Place one portion of the meat mixture in the center of a sheet of parchment paper. Keep a small bowl of water or oil nearby to wet your fingers and prevent sticking, then press and spread the meat thinly and evenly into a rectangle. Repeat for the second portion on another parchment sheet.
  5. Roll the Meat: Starting from the long edge, fold the parchment paper over the meat repeatedly, rolling it tightly like a flat rope. This wrapping helps shape the kebab and retain moisture.
  6. Bake: Place the parchment-wrapped meat rolls on a baking sheet and bake in the preheated oven for about 40 minutes until fully cooked through.
  7. Cool and Unroll: Remove from the oven and allow the meat rolls to cool slightly so they hold their shape when unrolled. Carefully unwrap the parchment and break the meat apart into desired serving pieces.
  8. Finish in Oven: Squeeze fresh lemon juice over the meat pieces, then return them to the oven briefly until they turn lightly golden and slightly crisp on the edges.
  9. Serve: Enjoy your doner kebab served inside pita bread or in a bowl topped with lettuce, pickles, tomato, red onion, and garlic sauce. Optionally, use store-bought garlic sauce or toum, or make your own by mixing yogurt, salt, garlic, and mayo.

Notes

  • Use a small bowl of water or oil to wet your fingers when shaping the meat to prevent sticking.
  • Yogurt tenderizes the meat and adds moisture for a juicy kebab.
  • The parchment paper helps the meat keep its shape and juiciness during baking.
  • Finishing the kebab with fresh lemon juice and a quick return to the oven gives added flavor and a pleasant crisp texture.
  • Garlic sauce or toum perfectly complements the doner and can be homemade or store-bought.
