This high protein chocolate chia pudding is a creamy and delicious plant-based breakfast or snack option, packed with protein and healthy fats. It’s easy to prepare, vegan-friendly, and perfect for fueling your day or aiding post-workout recovery with its rich chocolate flavor and satisfying texture.

Ingredients

Main Ingredients

  • 2 tablespoons chia seeds
  • 2 tablespoons cocoa powder
  • 1 scoop plant-based/vegan protein powder (chocolate or vanilla flavor)
  • 1 cup plant-based milk (almond, soy, or your choice)
  • 3 tablespoons maple syrup or agave nectar
  • 1 teaspoon vanilla extract (optional, to taste)
  • Pinch of sea salt

Optional Toppings

  • Coconut whip
  • Cacao nibs
  • Fresh berries
  • Dark chocolate shavings
  • Dairy-free yogurt
  • Sliced banana
  • Spoonful of peanut butter

Instructions

  1. Mix the Ingredients: In a bowl or jar, whisk together the plant-based milk, protein powder, cocoa powder, vanilla extract (if using), maple syrup, and pinch of sea salt until the mixture is smooth and well combined.
  2. Add the Chia Seeds: Stir in the chia seeds thoroughly, ensuring they are evenly distributed within the liquid mixture.
  3. Let it Sit for 5 Minutes: Allow the mixture to rest for 5 minutes, then stir again to prevent the chia seeds from clumping together and ensure even texture throughout.
  4. Chill & Thicken: Cover the bowl or jar and refrigerate for at least 2 hours, or ideally overnight. This allows the chia seeds to absorb the liquid and thicken into a creamy pudding-like consistency.
  5. Top & Serve: Before eating, give the pudding a quick stir. Add your favorite toppings such as dairy-free yogurt, dark chocolate shavings, fresh berries, sliced banana, or a spoonful of peanut butter for extra flavor and texture.

Notes

  • This chia pudding can be stored in the refrigerator for up to 4–5 days, making it ideal for meal prep.
  • Adjust the sweetness by adding more or less maple syrup or agave, according to your taste preference.
  • For a thicker pudding, use less plant-based milk or increase chia seeds slightly.
  • Try different flavors of plant-based protein powder to vary your pudding taste.
  • If using vanilla protein powder, you can omit the vanilla extract for simplicity.
