Assembly

  • 8 flour tortillas (8-inch, high fiber preferred)
  • 10 oz. can red enchilada sauce
  • 1 cup shredded Mexican cheese (about 84g)

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 375°F (190°C). Lightly spray a 9x13-inch baking dish with nonstick cooking spray to prevent sticking and set it aside.
  2. Make the filling: In a medium bowl, combine the Greek yogurt, refried beans, and taco seasoning, mixing well until smooth. Stir in the shredded chicken and 1/2 cup of shredded Mexican cheese until everything is evenly mixed.
  3. Fill the tortillas: Lay out the eight flour tortillas on a flat surface. Evenly distribute the chicken and bean mixture among the tortillas, using about 1/3 cup (approximately 80g) per tortilla.
  4. Roll and arrange: Roll each tortilla tightly around the filling and place them seam-side down in a single row inside the prepared baking dish.
  5. Add sauce and cheese: Pour the red enchilada sauce evenly over the rolled tortillas in the dish. Then sprinkle the remaining 1 cup of shredded Mexican cheese on top for a gooey, cheesy finish.
  6. Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted, bubbly, and slightly golden.
