These Healthy Vegan Brownies are a delicious, guilt-free treat made without any dairy or refined sugar. Using ripe banana and natural sweeteners like maple syrup, these brownies deliver rich chocolate flavor and a moist, fudgy texture. Whole wheat pastry flour and raw cacao powder provide wholesome ingredients while vegan chocolate chips and nuts add delightful bursts of texture and flavor. Perfect for a nutritious dessert or snack, these brownies bake quickly and are easy to prepare.

Ingredients

Wet Ingredients

  • 1 medium banana, ripened
  • 1/4 cup maple syrup or agave
  • 1/4 cup unsweetened almond milk (or plant milk of choice)
  • 1 1/2 teaspoons pure vanilla extract

Dry Ingredients

  • 3/4 cup whole wheat pastry flour
  • 1/4 cup raw cacao powder or unsweetened cocoa powder
  • 1/2 teaspoon baking soda (NOT BAKING POWDER)
  • 1/8 teaspoon salt

Add-ins

  • 1/4 cup vegan chocolate chips (e.g., Enjoy Life mini chocolate chips)
  • Chopped nuts: walnuts, pecans, or pistachios (amount as desired, approximately 1/4 cup)

Instructions

  1. Preheat Oven: Preheat your oven to 400˚F (204˚C) to ensure it’s hot and ready when your brownie batter is prepared.
  2. Prepare Wet Mixture: In a large mixing bowl, mash the ripened banana until fairly smooth with some small chunks remaining. Stir in the maple syrup (or agave), unsweetened almond milk, and pure vanilla extract until well combined.
  3. Add Dry Ingredients: Add the whole wheat pastry flour, raw cacao powder, baking soda, and salt to the wet mixture. Stir thoroughly until all ingredients are fully incorporated. The batter might feel slightly dry, but do not add extra liquid.
  4. Fold in Add-ins: Gently fold in the vegan chocolate chips and chopped nuts, distributing them evenly throughout the batter.
  5. Prepare Baking Pan: Line an 8×8 inch baking pan with parchment paper to prevent sticking. Spread the brownie batter evenly in the pan, smoothing the top for even baking.
  6. Bake: Place the pan in the preheated oven and bake for 10-12 minutes. To check doneness, insert a toothpick in the center; if it comes out clean, the brownies are baked through.
  7. Cool: Remove the brownies from the oven and allow them to cool for at least 20 minutes in the pan. This helps them set and makes slicing easier.
  8. Slice and Serve: Cut the brownies into 9 larger pieces or 12 smaller pieces according to your preference. Enjoy your healthy vegan brownies fresh or stored for later.

Notes

  • Use only baking soda, not baking powder, to ensure proper rise and texture.
  • Do not add extra liquid to the batter if it seems a bit dry; it will bake correctly as is.
  • Allowing the brownies to cool completely improves texture and makes slicing easier.
  • Feel free to substitute nuts or omit them for a nut-free version.
  • For sweeter brownies, choose maple syrup; for a more neutral sweetness, agave works well.
