Ingredients

For the Salad:

  • ½ cup chopped dried Turkish apricots (look for no sulfur added) or substitute dried cherries/cranberries
  • ⅓ cup finely diced red onion
  • ½ cup finely chopped fresh cilantro

  • 2-3 tablespoons warm water, to thin dressing
  • ½ tablespoon pure maple syrup
  • 1 garlic clove, minced
  • ¼ teaspoon salt, plus more to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Broccoli: Thoroughly wash and finely chop 5-6 cups of fresh broccoli florets until very small to ensure a great texture and easier eating experience.
  2. Combine Salad Ingredients: In a large mixing bowl, add the finely chopped broccoli, 1 ¼ cups fresh blueberries, 1 cup shredded or matchstick carrots, ½ cup chopped dried Turkish apricots, ⅓ cup finely diced red onion, ½ cup chopped cilantro, and ¼ cup chopped parsley. Mix gently to combine.
  3. Add Crunchy Nuts and Seeds: Stir in ½ cup toasted sliced almonds and ¼ cup roasted sunflower seeds to add a satisfying crunch and enhance the salad’s texture.
  4.
