  • 1 cup textured vegetable protein (dry; approx. 80g)

  • 1 bunch bok choy (about 3 stems, chopped; approx. 200g)
  • 1 red chili, finely sliced (optional)

Instructions

  1. Prepare the aromatics and vegetables: Mince the garlic thoroughly and finely slice the red chili if you choose to use it. Wash the bok choy well, trim off any tough ends, and chop into roughly 1-inch pieces to ensure even texture and easy eating.
  2. Make the flavorful stock paste: In a small bowl, combine tahini, hoisin sauce, miso paste, sriracha, minced garlic, vegetable bouillon powder, and Chinese five spice. Stir everything together until you achieve a smooth, consistent paste that will serve as the flavor base for your noodles.
  3. Assemble the jars: Divide the dry rice vermicelli noodles evenly across four medium-sized jars or lunch containers. If needed, break the noodles into smaller sections to better fit inside the container.
  4. Add protein and veggies to each jar: To each jar, add approximately 1/4 cup of dry textured vegetable protein, then layer in equal portions of the chopped bok choy and the sliced chili if using. Finish by adding a generous spoonful of the prepared stock paste on top in each jar.
  5. Store the meal prep jars: Seal each container tightly and refrigerate. These noodles are best when consumed within 3 to 4 days for optimal freshness and flavor.
  6. To serve: When ready to eat, pour boiling water into the jar until all ingredients are fully submerged. Allow the noodles and TVP to soak for 2 to 3 minutes.
