Ingredients

Chicken and Marinade

  • pounds skinless boneless chicken breasts, cut into 1-inch cubes
  • ¼ cup olive oil

  • 4 garlic cloves, minced
  • 2 teaspoons dried oregano or 1 tablespoon fresh oregano
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Vegetables

  • 1 small zucchini, sliced into ½ inch slices
  • 1 yellow pepper, cut into 1-inch chunks
  • 1 small red onion, cut into 1-inch chunks
  • ½ pint cherry tomatoes

Instructions

  1. Prepare the Chicken: Place the diced chicken in a large bowl or ziplock bag, ensuring all pieces are even in size for uniform cooking.
  2. Make and Apply Marinade: Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper until well combined. Reserve a couple of tablespoons of this marinade aside. Pour the rest over the chicken, toss to coat all pieces thoroughly, then seal the bag or cover the bowl. Refrigerate and let marinate for at least 30 minutes or up to 4 hours to infuse flavors.
  3. Preheat the Grill: Heat the grill to medium-high. Lightly oil the grill grates to prevent sticking and ensure clean cooking.
  4. Assemble the Kabobs: Thread the ingredients onto skewers by alternating a zucchini slice, pepper chunk, onion piece, cherry tomato, and chicken pieces. Repeat the pattern until the skewer is full. Prepare all skewers similarly until all chicken and vegetables are used.
  5. Discard Used Marinade: Safely dispose of any remaining marinade that was in contact with raw chicken to prevent cross-contamination.
