Ingredients

Chicken and Buffalo Sauce

  • 2 large boneless skinless chicken breasts
  • 1 tbsp avocado oil
  • 1-2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp cracked pepper
  • 1/2 cup buffalo sauce (e.g. Franks)

Bowls

  • 2 cups cooked rice (white, brown, or cauliflower rice for low-carb option)
  • 8 cups mixed greens
  • 1 cup shredded carrots
  • 1 cup pickles
  • 2 avocados, cubed
  • 1/2 cup green onions, sliced

High Protein Ranch Dressing

  • 1 cup Greek yogurt
  • 2 tbsp ranch seasoning
  • 1-2 tbsp coconut milk (adjust for desired consistency)
  • 1 tsp lemon juice
  • 1 tsp apple cider vinegar or white wine vinegar

Instructions

  1. Prepare The Chicken: Season the chicken breasts evenly with garlic powder, salt, and cracked pepper to enhance flavor.
  2. Cook The Chicken: Heat a pan over medium-high heat and add avocado oil. Place the seasoned chicken breasts in the hot pan and cook for about 6-7 minutes on one side. Flip and cook for another 6-7 minutes or until the internal temperature reaches 165°F and juices run clear. Remove and cut the chicken into cubes.
  3. Add Buffalo Sauce: Place the cooked chicken cubes in a large bowl. Pour the buffalo sauce over the chicken and toss until all pieces are thoroughly coated in the sauce.
  4. Make The Ranch Dressing: In a separate bowl, combine Greek yogurt, ranch seasoning, coconut milk, lemon juice, and apple cider vinegar. Mix well until smooth and creamy. Adjust coconut milk quantity to achieve desired consistency.
  5. Assemble The Bowls: Divide the mixed greens evenly among serving bowls. Add the cooked rice on top, followed by the buffalo chicken, shredded carrots, pickles, avocado cubes, and green onions.
  6. Top With Dressing: Drizzle or dollop the high-protein ranch dressing over each bowl. Serve immediately and enjoy the fresh, spicy, and creamy flavors together.

Notes

  • You can substitute cauliflower rice for a low-carb variation.
  • Adjust the amount of buffalo sauce to control heat level.
  • The ranch dressing can be stored in the refrigerator for up to 3 days.
  • Ensure chicken is cooked thoroughly to an internal temperature of 165°F for food safety.
  • Use Greek yogurt for a high-protein and creamy ranch alternative.
  • Optionally add more veggies or toppings like cherry tomatoes or cucumber for extra freshness.
