Instructions

  1. Soak Cashews: Begin by soaking your cashews. You can soak them in boiling water for at least 15 minutes or leave them overnight to soften. This ensures a creamy filling when blended.
  2. Prepare the Crust: While the cashews soak, combine the pecans, pitted dates, shredded coconut, cinnamon, melted coconut oil, and sea salt in a food processor. Pulse until the mixture forms a sticky dough. Press this dough evenly into the bottom and slightly up the sides of an 8x8-inch square pan.
  3. Make the Filling: Drain the soaking water from the cashews. In a blender or food processor, combine the cashews, coconut cream, real maple syrup, melted coconut oil, lime juice, lime zest, and sea salt. Blend until completely smooth and creamy, which may take up to 5 minutes.
  4. Assemble and Freeze: Pour the smooth filling over the prepared crust, spreading it evenly. Transfer the pan to the freezer and freeze for at least 2 hours, or until the filling is fully set.
