A hearty and delicious Hash Brown Breakfast Casserole featuring savory sausage, crispy hash browns, and melted cheddar cheese baked to perfection. Ideal for a family breakfast or brunch, this casserole combines simple ingredients with easy prep and baking for a satisfying morning meal.

Ingredients

Meat

  • 1 pound bulk breakfast sausage (or remove the casing from links)

Vegetables & Cheese

  • 12-18 ounces frozen hash browns, thawed (about half a package)
  • 1 ½ cups cheddar cheese, shredded

Egg Mixture

  • 6 large eggs
  • ½ cup milk
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon ground mustard

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to ensure it’s hot and ready for baking the casserole.
  2. Cook the sausage: In a large skillet over medium heat, cook the bulk breakfast sausage until it’s no longer pink, breaking it into bite-size pieces as it cooks. Once fully cooked, drain the excess fat to keep the casserole from being greasy.
  3. Prepare the baking dish: Spray a 9x13-inch baking dish with nonstick cooking spray. Spread the thawed hash browns evenly across the bottom of the dish to form the base layer.
  4. Layer sausage and cheese: Sprinkle the cooked sausage evenly over the hash browns, then add a layer of shredded cheddar cheese on top of the sausage.
  5. Mix and pour egg mixture: In a medium bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, pepper, and ground mustard until well combined. Pour this egg mixture evenly over the layered casserole in the baking dish.
  6. Bake with foil: Cover the baking dish with foil and bake in the preheated oven for 40 minutes to allow the casserole to set gently.
  7. Remove foil and finish baking: Carefully remove the foil and continue baking for an additional 20-30 minutes, or until the center of the casserole is fully set and firm.
  8. Serve hot: Remove the casserole from the oven and let it sit for a few minutes before serving. Cut into squares and enjoy your hearty breakfast casserole warm.

Notes

  • Ensure the hash browns are fully thawed to avoid excess moisture in the casserole.
  • Feel free to swap the sausage for a vegetarian alternative if desired.
  • Cheddar cheese can be substituted with your favorite cheese varieties like Monterey Jack or pepper jack for extra flavor.
  • Covering with foil for the first part of baking helps prevent the casserole from drying out.
  • This casserole can be prepared the night before and refrigerated, then baked fresh in the morning.
  • Adjust spices to taste for preferred seasoning levels.
