  • 50g harissa paste
  • 500g chicken thighs, skinless, boneless, chopped
  • 1 medium carrot, grated
  • 200g dried puy lentils
  • 800g chopped tomatoes (2 x 400g cans)
  • 1.2l chicken stock
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the base: In a large saucepan or pot, warm the olive oil over low heat. Add the chopped red onion and fry gently until softened, about 5-6 minutes. Then add the crushed garlic clove and cook for another minute while stirring to release its aroma.
  2. Add harissa and chicken: Stir in the 50g of harissa paste until evenly mixed. Add the chopped chicken thighs to the pot and cook until they are browned on all sides, which will help lock in flavor.
  3. Add vegetables and lentils: Mix in the grated carrot, dried puy lentils, chopped tomatoes, and chicken stock. Make sure the stock fully covers the chicken and lentils to allow even cooking.
  4. Cook the stew: Keep the heat low, leave the pot uncovered, and simmer the dish for 35-45 minutes. During this time, the lentils will absorb the stock and become tender while the chicken cooks through completely.
  5. Season and serve: Taste the stew and season with salt and pepper according to your preference. Serve hot with your choice of side or enjoy it as a hearty one-pot meal.

  • You can substitute chicken thighs with chicken breasts, but thighs remain juicier and more flavorful.
