Ingredients

Produce

  • 4 fresh habanero peppers (stems removed)
  • 2 medium-sized Roma tomatoes (halved)
  • 1 white onion (quartered)
  • 4 garlic cloves (unpeeled)

Liquids and Oils

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons lime juice (fresh or bottled)
  • 1 tablespoon extra virgin olive oil
  • 1-2 tablespoons cold water (optional, for consistency)

Spices and Seasonings

  • ¼ teaspoon ground coriander
  • 1 teaspoon sea salt

Instructions

  1. Roast the vegetables: Heat a dry skillet over medium-high heat. Add the habaneros, Roma tomatoes, quartered onion, and garlic cloves with their skins still on. Roast the vegetables, turning them occasionally, until they develop charred spots and become softened, which should take about 10 minutes.
  2. Prepare garlic: Allow the roasted vegetables to cool slightly. Peel the garlic cloves, discarding their skins as they will have softened and separated during roasting.
  3. Blend the salsa: Transfer the roasted habaneros, tomatoes, onion, and peeled garlic into a blender or food processor. Add the apple cider vinegar, fresh lime juice, ground coriander, sea salt, and extra virgin olive oil. Blend the ingredients until you achieve a mostly smooth consistency with a bit of texture remaining. If the salsa is too thick based on the tomato's water content, add cold water one tablespoon at a time to adjust the consistency.
  4. Adjust seasoning: Taste the salsa and adjust the salt or lime juice according to your preference for balance and acidity.
  5. Chill the salsa: For the best flavor, let the salsa chill in the refrigerator for at least 30 minutes. This resting time helps deepen the flavors and mellows the intense heat from the habaneros.
  6. Serve and enjoy: Serve your homemade habanero salsa chilled or at room temperature alongside your favorite dishes such as tacos, grilled meats, or as a vibrant dip.

Notes

  • Use gloves when handling habanero peppers to avoid skin irritation.
  • You can adjust the number of habaneros to control the heat level.
  • Roasting the vegetables adds a smoky depth to the salsa.
  • If you prefer a smoother salsa, blend longer or strain before serving.
  • Store leftover salsa in an airtight container in the refrigerator for up to one week.
