  • 1 pound ground turkey

  • 1 cup onion, diced
  • 1 yellow bell pepper, diced
  • 3 small or 2 large sweet potatoes, peeled and diced (about 3 cups)
  • ½ cup water
  • ½ cup mozzarella, shredded
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Heat Skillet and Sauté Garlic and Turkey: Heat a large cast iron skillet over medium-high heat. Add olive oil, then minced garlic, and cook for about 1 minute until fragrant. Add ground turkey, breaking it apart with a wooden spoon, and cook for approximately 8 minutes until the turkey is browned.
  2. Add Spices: Stir in ground cumin, chili powder, salt, and pepper. Mix well to evenly coat the meat with the spices.
  3. Add Vegetables and Simmer: Add diced onion and yellow bell pepper to the skillet and cook for 3 to 4 minutes until they start to soften. Then add the diced sweet potatoes and ½ cup water. Stir to combine, then cover the skillet with a lid and cook for 6 to 8 minutes until the sweet potatoes become tender. Add additional water if necessary to prevent drying.
  4. Finish and Garnish: Remove the lid. Adjust seasoning by adding more salt and pepper if needed. Top the skillet with shredded mozzarella cheese and let it melt. Remove the skillet from heat, garnish with fresh chopped cilantro, and serve hot.
