A flavorful and easy-to-make Ground Beef Taco Bowl featuring seasoned ground beef served over cilantro lime rice, topped with fresh veggies, beans, cheese, and a squeeze of lime. Perfect for a quick 20-minute meal that combines classic Mexican flavors in a wholesome bowl.

Ingredients

For the Ground Beef:

  • 1 lb ground beef
  • 4 tbsp taco seasoning (or 1 packet)
  • 1/4 cup water

For the Bowl Assembly:

  • 4 cups cilantro lime rice
  • 1 cup canned corn (drained)
  • 1 cup black beans (drained and rinsed)
  • 1 cup Cheddar cheese (shredded)
  • 4 tbsp cilantro (chopped)
  • 1 cup tomatoes (chopped)
  • 1 jalapeño (sliced)
  • Sour cream (to taste)
  • Lime wedges (for serving)
  • Corn tortilla chips (for serving, optional)

Instructions

  1. Cook the Ground Beef: Heat a skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until browned and fully cooked. Drain excess grease, then stir in the taco seasoning and water. Cook for an additional 2-3 minutes until the seasoning is well distributed and the mixture is heated through.
  2. Prepare the Cilantro Lime Rice: Heat the cilantro lime rice according to package instructions or prepare homemade cilantro lime rice by cooking rice and mixing in chopped cilantro, lime juice, and zest.
  3. Assemble the Bowls: On individual plates or bowls, create a base layer of cilantro lime rice. Spoon the cooked and seasoned ground beef evenly on top of the rice.
  4. Add Toppings: Top each serving with drained corn, black beans, shredded cheddar cheese, chopped tomatoes, and jalapeño slices.
  5. Garnish and Serve: Add a dollop of sour cream on each bowl, sprinkle with chopped cilantro, and squeeze fresh lime juice over the top. Serve with lime wedges and corn tortilla chips on the side for dipping, if desired. Enjoy immediately.

Notes

  • For a spicier bowl, add more jalapeño or a dash of hot sauce.
  • Use reduced-fat cheddar cheese or Greek yogurt instead of sour cream for a lighter version.
  • Black beans and corn can be substituted with other beans or vegetables as preferred.
  • Prepare cilantro lime rice in advance to save time.
  • Leftovers can be stored in the refrigerator for up to 3 days.
