Sauce Ingredients

  • 2 Tablespoons cornstarch + 2 Tablespoons cold water
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 3 tablespoons packed brown sugar
  • 1-2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1 teaspoon toasted sesame oil

Additional

  • 3 cups cooked rice (any kind)

Instructions

  1. Prep Work: Prepare all your ingredients by washing and drying the broccoli florets, dicing the onion, slicing the red bell pepper, mincing the garlic, and measuring out the sauce ingredients.
  2. Make Cornstarch Slurry: In a covered container, combine 2 tablespoons of cornstarch with 2 tablespoons of cold water. Shake well to mix thoroughly and refrigerate in a cool place until ready to use.
  3. Mix Sauce: In a medium bowl, combine beef broth, soy sauce, brown sugar, minced garlic, ground ginger, toasted sesame oil, and start with 1 tablespoon of honey. Stir well and set aside. Additional honey can be added later if desired for sweetness.
  4. Cook the Broccoli: Heat peanut oil in a large skillet or pan over medium heat. Add the broccoli florets and toss to coat them evenly with the oil. Cook for 4 to 5 minutes until the broccoli is slightly softened but still crisp. Remove from pan and set aside.
  5. Cook the Ground Beef: Season the ground beef with salt and white pepper as preferred. Add the beef and diced onion to the pan over medium-high heat. Cook, breaking the beef apart, until browned and fully cooked. Drain any excess grease. Add the sliced red bell pepper and cook for an additional minute to soften slightly.
  6. Add the Sauce: Pour the prepared sauce mixture into the pan with the beef and bell pepper. Bring it to a boil, then reduce heat and let it simmer gently for 2 to 3 minutes to reduce slightly and meld flavors.
  7. Thicken the Sauce: Shake the cornstarch slurry well, then slowly stir it into the simmering sauce. Continue cooking and stirring gently as the sauce thickens to your desired consistency.
  8. Combine Broccoli: Reduce heat to low and add the cooked broccoli back into the pan. Stir everything together to combine and heat through, allowing the flavors to blend.
  9. Serve: Garnish with green onions if desired and serve hot over 3 cups of cooked rice for a complete meal.
