4 peaches
4 cups spring mix
2 large tomatoes, cut into chunks
1/2 cup feta, crumbled
1/3 cup kalamata olives
1/2 cup mint (optional)
1/4 cup tarragon (optional)
1/2 cup walnuts, chopped
1 tbsp zaatar
Dressing and Grilling
1 tbsp olive oil (for brushing peaches)
2 tbsp olive oil (for dressing)
2 tbsp pomegranate molasses
Instructions
Preheat Grill: Preheat the grill to medium high to ensure it's hot enough for grilling peaches.
Prepare Peaches: Cut the peaches in half, remove the pits, and slice each half into 4 wedges. Lightly brush each slice with 1 tablespoon of olive oil to prevent sticking and add flavor.
Grill Peaches: Place the peach slices directly on the grill grates or in a grilling basket. Grill for 3 to 4 minutes on each side until tender and grill marks appear. Remove and let cool for 10 minutes.
Assemble Salad: Arrange the spring mix on a large platter. Top with tomatoes, crumbled feta, kalamata olives, grilled peaches, mint, tarragon, and chopped walnuts for a complex blend of flavors and textures.
Add Seasoning and Dressing: Sprinkle zaatar evenly over the salad. Drizzle with the remaining 2 tablespoons of olive oil and pomegranate molasses to add a tangy sweetness. Serve immediately for best freshness.
Notes
If fresh peaches are not available, slightly firm but ripe peaches work best for grilling.
Mint and tarragon are optional but add a refreshing herbal note to the salad.
Walnuts can be toasted lightly for extra crunch and depth of flavor.
To make this salad vegan, substitute feta with a plant-based cheese or omit.
