This classic Green Jell-O Salad is a delightful, nostalgic dessert featuring layers of lime gelatin, creamy cream cheese, crushed pineapple, and optional toasted pecans. Ingredients

Gelatin and Liquid

  • 1 (16-ounce) can crushed pineapple (drained but reserve the juice)
  • 2 1/2 cups water (or more to make up 3 cups of liquid with the reserved pineapple juice)
  • 1 (6-ounce) package powdered lime gelatin (or two 3-ounce packages)

Creamy Layer

  • 1 (8-ounce) package cream cheese (softened)
  • 1/2 cup (60g) chopped toasted pecans (optional)

Instructions

  1. Prepare the mold: Spray a 5- to 6-cup bundt pan or jello mold with a thin layer of cooking spray and set aside. Drain the crushed pineapple, reserving the juice for gelatin preparation.
  2. Make the gelatin base: Combine the reserved pineapple juice with enough water to total 1 1/2 cups of liquid. Bring this mixture to a boil over medium-high heat, either in a saucepan or microwave for about 3 minutes. Remove from heat and stir in the powdered lime gelatin until completely dissolved. Then add the remaining 1 1/2 cups of cold water and stir well.
  3. Create the clear gelatin layer: Pour approximately 3/4 cup of the prepared plain lime gelatin into the prepared mold or a suitable bowl/pan. Refrigerate for 30-45 minutes until this layer is set but firm. This bright layer adds a lovely color and design element to the salad.
  4. Make the creamy gelatin layer: Whisk 3/4 cup of the remaining gelatin into the softened cream cheese until smooth and combined. Gradually whisk in the rest of the gelatin mixture until fully blended and creamy.
  5. Add pineapple and pecans: Fold the drained crushed pineapple and chopped toasted pecans into the creamy gelatin mixture carefully to maintain texture.
  6. Assemble and chill: Gently spoon the creamy pineapple layer over the set clear gelatin layer in the mold. Return the salad to the refrigerator and chill for 4 hours or until the entire salad is firm.
  7. Unmold and serve: To release, immerse the mold in a pan filled halfway with hot water for 3-5 seconds to loosen the gelatin without melting it. Remove carefully, invert a serving plate over the mold, and flip it to release the salad onto the plate. If needed, repeat the hot water dip to loosen further. Serve immediately or keep refrigerated until ready to serve.

Notes

  • Use room temperature cream cheese for easier blending with gelatin.
  • Toasted pecans are optional but add a nice crunch and flavor contrast.
  • Make sure not to leave the mold in hot water too long to avoid melting the gelatin.
  • You can substitute lime gelatin with lemon gelatin for a different but complementary flavor.
