Instructions

  1. Preheat the Oven: Position a rack in the center of your oven and preheat to 400°F (200°C). Lightly oil a baking dish large enough to hold the salmon fillet.
  2. Prepare the Greek-Style Sauce: In a small bowl, whisk together the lemon juice, half of the lemon zest, minced garlic, Greek oregano, chopped fresh dill, and enough extra virgin olive oil (about 1/3 cup) to generously coat the salmon. This sauce will infuse the fish with bright, herby flavors.
  3. Season and Assemble: Pat the salmon fillet dry with paper towels. Season both sides generously with kosher salt and black pepper. Place the salmon in the prepared baking dish, then scatter the chopped green onions and cherry tomatoes around and on top of the fish.
