This Greek Okra Stew, known as Bamies Latheres, is a hearty and flavorful vegetable dish featuring tender okra simmered with potatoes, carrots, and aromatic herbs in a rich tomato sauce. Perfect as a comforting main or side dish, this stew highlights the Mediterranean flavors of fresh dill, parsley, and mint combined with olive oil and simple seasonings.

Ingredients

Vegetables

  • 1 onion, chopped
  • 2 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and diced
  • 340 grams (20 oz) frozen okra

Liquids & Sauces

  • 1 cup tomato sauce
  • 3 cups water
  • 1/2 cup olive oil

Herbs & Seasonings

  • 2 tablespoons dill, chopped
  • 2 tablespoons parsley, chopped
  • 2 tablespoons mint, chopped
  • 1 tablespoon salt
  • Pepper to taste

Instructions

  1. Prepare the vegetables: Chop the onion finely. Peel and slice the carrots and potatoes into bite-sized pieces. Rinse the frozen okra under cold water to remove any ice crystals.
  2. Sauté the onion: Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes, stirring occasionally to avoid browning.
  3. Add carrots and potatoes: Stir in the carrots and potatoes, cooking for another 3-4 minutes to slightly soften the vegetables.
  4. Add okra and tomato sauce: Mix in the frozen okra and pour in the tomato sauce. Stir well to combine all the ingredients.
  5. Add water and seasonings: Pour in the 3 cups of water, then add the salt and pepper. Stir thoroughly to incorporate the seasoning evenly throughout the stew.
  6. Simmer the stew: Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Let it simmer gently for about 30-40 minutes until the vegetables are tender and the stew has thickened slightly.
  7. Add fresh herbs: Stir in the chopped dill, parsley, and mint during the last 5 minutes of cooking to preserve their fresh flavors and aromas.
  8. Final taste and serve: Adjust seasoning if needed by adding more salt or pepper. Serve the okra stew warm alongside crusty bread or as a side dish to grilled meats or fish.

Notes

  • Using frozen okra saves prep time and prevents sliminess often associated with fresh okra.
  • Fresh herbs like dill, parsley, and mint are essential for authentic Greek flavors.
  • If you prefer a thicker stew, cook uncovered for the last 10 minutes to reduce excess liquid.
  • This stew pairs well with crusty bread or a side of rice for a complete meal.
  • You can substitute fresh okra if available, but be sure to dry it well before cooking to reduce slime.
