Ingredients

For the Chicken Marinade

  • 2 English cucumbers (cubed)
  • 1 lb cherry tomatoes (halved)
  • 1 red onion (sliced)
  • 1/2 lemon (juiced, freshly squeezed)
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 2 garlic cloves (minced)
  • 1/2 tsp dried oregano

For the Tzatziki Sauce

  • 1/2 cup Greek yogurt
  • 1/2 English cucumber (diced)
  • 2 cloves garlic (minced)
  • 1 tbsp fresh dill (chopped)
  • 1 tsp lemon juice
  • 1 tsp fresh mint (chopped)
  • Salt and black pepper (to taste)

Additional

  • 2 cups basmati rice (cooked)

Instructions

  1. Marinate the Chicken: In a large bowl, combine the cubed chicken breasts with olive oil, Greek yogurt, lemon juice, red wine vinegar, minced garlic, dried oregano, salt, and black pepper. Mix thoroughly to coat the chicken evenly. Cover and refrigerate for at least 20 minutes, up to 12 hours, to allow the flavors to infuse.
  2. Prepare the Salad: While the chicken marinates, in a large bowl, mix the cubed English cucumbers, halved cherry tomatoes, sliced red onion, freshly squeezed lemon juice, olive oil, red wine vinegar, minced garlic, and dried oregano. Toss well to combine all the fresh ingredients and set aside to let flavors meld.
  3. Make the Tzatziki Sauce: In a separate bowl, combine Greek yogurt, diced cucumber, minced garlic, chopped fresh dill, lemon juice, chopped fresh mint, salt, and black pepper. Stir until smooth and creamy. Adjust seasoning to taste and refrigerate until ready to serve.
