A refreshing and vibrant Peach Salad featuring thinly sliced cucumber, shallots, fresh peaches, and mint, all tossed with a tangy lime dressing and finished with a drizzle of honey. Perfect for a light, fresh side or a quick snack enjoyed immediately for maximum flavor and texture.

Ingredients

Salad Ingredients

  • 1/2 English cucumber, thinly sliced (about 1 cup)
  • 1/2 shallot, thinly sliced (about 1/4 cup)
  • 2 peaches, pitted and sliced (about 2 cups)
  • About 2 tablespoons packed fresh mint leaves

Dressing & Finishing

  • 2-3 teaspoons olive oil
  • 1 lime, juiced and zested (about 1 tablespoon juice, 1 teaspoon zest)
  • 2-3 teaspoons honey (regular or hot honey)
  • Salt and pepper, to taste

Instructions

  1. Mix Cucumbers and Shallots. Thinly slice the cucumbers and shallots using a mandoline or knife. Place them in a bowl and toss with lime juice, lime zest, olive oil, salt, and pepper. Let the mixture sit for 10 minutes to marinate.
  2. Add Peaches and Mint. Add the sliced peaches and fresh mint leaves to the marinated cucumber and shallot mixture.
  3. Drizzle with Honey. Drizzle the salad with honey (hot honey recommended for a kick) and gently toss everything together to combine all flavors.
  4. Serve Immediately. Garnish with extra mint leaves, additional honey, and more salt and pepper if desired. This salad is best enjoyed fresh and does not keep well as leftovers.
