A refreshing and nutrient-packed Goji Berry Smoothie made with soaked goji berries, frozen banana, strawberries, chia seeds, and almond milk. This easy-to-make smoothie combines natural sweetness and a creamy texture for a delicious and healthy breakfast or snack option.

Ingredients

Fruits and Seeds

  • ½ cup dried goji berries (approx. 43g, soaked in warm water before blending)
  • 1 large frozen banana (broken into chunks; approx. 1⅓ cups mashed or 265g)
  • 2 cups frozen strawberries (whole or halved; approx. 284g)
  • 1 tbsp chia seeds (approx. 11g)

Liquids and Flavorings

  • 2 cups unsweetened almond milk (or oat/soy milk; approx. 480ml or 456g)
  • ¼ tsp vanilla extract (optional)

Instructions

  1. Soak Goji Berries: Soak the dried goji berries in warm water for 5 to 10 minutes until they are softened. Once soaked, drain the water well to prepare them for blending.
  2. Combine Ingredients: In a blender, add the soaked goji berries, frozen banana chunks, frozen strawberries, chia seeds, unsweetened almond milk, and vanilla extract if you choose to use it.
  3. Blend Smooth: Blend the mixture on high speed until it becomes smooth and creamy, ensuring all the ingredients are well combined without lumps.
  4. Serve: Pour the smoothie into glasses or jars immediately for the freshest taste and best texture.
  5. Optional Topping: If desired, garnish with extra goji berries or a sprinkle of chia seeds to add texture and enhance the presentation.

Notes

  • Soaking goji berries softens them and improves blending texture.
  • You can substitute almond milk with oat or soy milk as preferred.
  • Using frozen fruits eliminates the need for ice, keeping the smoothie thick and creamy.
  • Chia seeds add fiber, omega-3 fatty acids, and help thicken the smoothie.
  • Serve immediately for best flavor and nutritional benefits.
