Ingredients

Pizza Dough

  • 1 package (6.5 ounces or around 200 grams) gluten free pizza dough mix

Toppings

  • to 1/2 cup pizza sauce or tomato sauce (if using tomato sauce, mix in 1/4 teaspoon garlic powder and pinch of salt, black pepper, and onion powder)
  • 1/3 cup to 1/2 cup sliced or diced bell peppers or other veggies
  • Uncured pepperoni, cooked ground sausage, or diced chicken (optional)
  • 1/3 cup to 1/2 cup shredded cheese of choice

  • Non-stick cooking spray

Instructions

  1. Prepare the Dough: Follow package instructions to prepare the gluten-free pizza dough. Once ready, roll out the dough with a floured rolling pin into a 12 x 10 inch rectangle about 1/2 inch thick.
  2. Chill the Dough: Chill the rolled dough in the freezer for 10 minutes or in the fridge for 30 minutes to make it easier to handle.
  3. Preheat Oven and Prepare Pan: Preheat your oven to 425°F (220°C) and spray a muffin pan with non-stick cooking spray. Set aside.
  4. Cut Dough Circles: Using the top of a regular mason jar lid or a large round cookie cutter, cut circles from the dough. Carefully transfer each circle into a muffin cup, laying it flat to form the crust base. Fill 10 to 12 muffin cups this way.
  5. Add Toppings: Spoon about one tablespoon of pizza sauce onto each dough base. Top with diced bell peppers or other vegetables, your choice of protein if using (pepperoni, sausage, or chicken), and finish with shredded cheese.
  6. Bake: Place the muffin pan on the center oven rack and bake for 11 to 14 minutes, checking at 10 minutes. Bake until the dough is golden brown and the cheese has melted.
  7. Store Leftovers: Allow the pizza muffins to cool slightly, then store any leftovers in an airtight container in the fridge for up to 4 days.
