Ingredients

Wet Ingredients

  • 2/3 cup cane sugar (ensure organic for vegan-friendly)
  • 1/3 cup softened vegan butter
  • 3 Tbsp lemon zest (from about 4-5 lemons)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup plain, unsweetened dairy-free milk (such as almond milk)

Dry Ingredients

  • 1 cup almond flour (recommend Wellbee’s brand)
  • 1 1/4 cups gluten-free 1:1 flour blend (or all-purpose flour if not gluten-free)
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1 1/2 Tbsp poppy seeds

Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 350°F (176°C) and line a standard 12-cup muffin tin with liners or lightly grease the cups to prevent sticking.
  2. Cream Sugar, Butter, and Lemon Zest: In a medium bowl or stand mixer, combine cane sugar, softened vegan butter, and lemon zest. Beat using an electric mixer for about 2 minutes until the mixture is light and fluffy.
  3. Add Wet Ingredients: Mix in the applesauce, lemon juice, and vanilla extract at medium speed until the mixture is well combined and slightly fluffy. The batter might look curdled at this stage; don't worry, it will smooth out.
  4. Incorporate Almond Flour and Milk: Add the almond flour and beat until smooth. Then pour in the dairy-free milk and stir on low speed just until fully combined.
  5. Add Dry Ingredients and Poppy Seeds: Mix in the gluten-free flour blend, baking powder, baking soda, sea salt, and poppy seeds. Beat on medium until the batter is light, fluffy, and the poppy seeds are evenly distributed.
  6. Fill Muffin Liners and Bake: Evenly divide the batter into the muffin liners, filling each about three-quarters full. Bake for 30 to 34 minutes, until the muffin edges turn lightly golden and a toothpick inserted comes out with just a few crumbs.
  7. Cool Completely: Allow the muffins to cool fully in the pan before serving to achieve the best texture and flavor.
  8. Store Properly: Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to one month.

Notes

  • For a gluten-free option, ensure the flour blend is certified gluten-free.
  • Using organic cane sugar keeps the recipe vegan.
  • Letting muffins cool completely improves texture and prevents sogginess.
  • Vegan butter can be substituted with coconut oil, but flavor and texture may slightly differ.
  • Store muffins in the freezer for longer shelf life and thaw before serving.
