Instructions

  1. Prepare the chicken and vegetables: Heat olive oil in a large pot over medium heat. Add the chicken thighs and brown each side for about 4-5 minutes until golden. Remove the chicken and set aside. In the same pot, add diced onion, carrots, celery, and minced garlic. Sauté for 5-7 minutes until vegetables begin to soften.
  2. Add spices and liquids: Return the browned chicken thighs to the pot. Pour in chicken broth and water. Add salt, black pepper, dried thyme, dry parsley, paprika, and bay leaves. Stir well to combine all ingredients.
  3. Simmer the soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30-40 minutes until the chicken is fully cooked and the flavors meld together.
  4. Cook the gluten free pasta: Remove the chicken thighs from the pot and shred the meat using two forks, discarding bones and skin. Return the shredded chicken to the pot. Add the gluten free pasta to the simmering soup and cook for an additional 8-10 minutes or until the pasta is tender but not mushy.
  5. Final seasoning and serving: Remove bay leaves. Taste the soup and adjust salt or pepper as needed. Serve hot with crusty gluten free bread or fresh herbs garnished if desired.
