Instructions

  1. Heat the olive oil: In a large pot or Dutch oven, warm 2 tablespoons of olive oil over medium heat to prepare for sautéing the vegetables and browning the chicken.
  2. Sauté the vegetables: Add diced onion, carrots, celery, and minced garlic to the pot and cook for about 5-7 minutes until the vegetables soften and the onion becomes translucent, stirring occasionally to prevent sticking.
  3. Brown the chicken thighs: Place the 6 chicken thighs into the pot with the vegetables and cook for 4-5 minutes per side until slightly browned, which will deepen the flavor of the soup.
  4. Add seasonings and liquids: Sprinkle in 1 tablespoon salt, ½ teaspoon black pepper, 1 ½ teaspoon dried thyme, 1 ½ tablespoon dry parsley, ½ teaspoon paprika, and add the 3 bay leaves. Pour in 4 cups of chicken broth and 4 cups of water, stirring everything together.
  5. Simmer the soup: Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer gently for 30-40 minutes, allowing the chicken to cook through and the flavors to meld beautifully.
  6. Cook the gluten-free pasta: In a separate pot, boil the 8 oz of gluten-free pasta according to the package instructions until al dente. Drain the pasta and set aside.
