Ingredients

Berry Mixture

  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon

  • 3/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup gluten-free old fashioned rolled oats

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 400°F (204°C). Lightly grease a 2-quart baking dish with non-stick spray and set it aside to prepare for the berry mixture.
  2. Mix Berry Filling: In a large mixing bowl, combine the mixed berries, 1/4 cup gluten-free flour, 1/4 cup light brown sugar, cinnamon, vanilla extract, and kosher salt. Stir until the berries are evenly coated. Pour this mixture into the prepared baking dish, spreading it out evenly.
  3. Prepare Crumble Topping: In a separate bowl, whisk together the gluten-free flour, brown sugar, and cinnamon. Using a pastry blender or fork, cut the cold, cubed butter into the flour mixture until the texture resembles coarse crumbs. Gently fold in the gluten-free rolled oats to distribute them throughout the topping.
  4. Assemble and Bake: Evenly sprinkle the oat topping over the berry mixture in the baking dish, covering the berries completely. Place the dish in the preheated oven and bake for 40-45 minutes until the topping is golden brown and the berry edges are bubbling. Begin checking at 35 minutes and cover loosely with foil if the topping starts to brown too quickly to prevent burning.
