Ingredients

Dry Ingredients

  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon freshly ground black pepper

Butter and Cheese

  • 6 tablespoons cold unsalted butter (cubed)
  • 1 cup sharp Cheddar cheese (shredded), divided
  • 1 tablespoon dried chives (or fresh - see notes)

Wet Ingredients

  • 1/2 cup milk, plus 1 tablespoon and extra for brushing
  • 2 tablespoons full-fat plain yogurt (or sour cream)
  • 1 tablespoon Dijon mustard (or brown mustard)
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Prepare the Air Fryer Basket: Cut a circle of parchment paper slightly smaller than the air fryer basket to prevent sticking and ensure even cooking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the gluten-free flour, baking powder, sea salt, cayenne pepper, and black pepper until fully combined.
  3. Incorporate Butter: Add the cold, cubed unsalted butter to the dry mixture. Using your fingertips or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter pieces. Avoid overmixing to maintain flakiness.
  4. Add Cheese and Chives: Stir in three-quarters of the shredded Cheddar cheese along with the dried chives, distributing them evenly through the flour mixture.
  5. Combine Wet Ingredients: In a separate small bowl, whisk together the milk, yogurt, mustard, and olive oil until smooth and homogenous.
  6. Mix Wet and Dry Components: Pour the wet ingredients into the dry ingredients and gently fold until just combined, forming a soft and slightly tacky dough. If the dough feels dry or crumbly, add additional milk 1 tablespoon at a time until it holds together when pressed.
  7. Shape the Dough: Transfer the dough to the parchment paper and gently press it into a 1 1/4-inch thick round, smoothing the surface.
  8. Cut into Wedges: Slice the dough round into 6 equal wedges, carefully separating them slightly on the parchment to allow for expansion during cooking.
  9. Prepare for Cooking: Lightly brush the tops of the scones with milk and sprinkle with the remaining shredded Cheddar cheese for a golden, cheesy crust.
