This delicious Ginger Fried Rice features ground chicken for added richness and texture, paired with crispy jasmine rice infused with warm, zesty ginger flavors. Ingredients

Marinating

  • 8 oz ground chicken
  • 2 teaspoons Shaoxing wine
  • 2 teaspoons soy sauce
  • 1/4 teaspoon salt
  • 1/2 teaspoon grated ginger

Fried Rice

  • 3 tablespoons vegetable oil
  • 1 tablespoon ginger, minced
  • 3 eggs, beaten with a pinch of salt
  • 4 scallions, sliced (white and green parts separated)
  • 4 cups overnight jasmine rice, fluffed
  • 1/2 teaspoon salt

Instructions

  1. Marinate the chicken: In a medium bowl, combine ground chicken, Shaoxing wine, soy sauce, 1/4 teaspoon salt, and 1/2 teaspoon grated ginger. Mix thoroughly and let marinate for 10 minutes while you prepare other ingredients.
  2. Cook the eggs: Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat until shimmering. Pour in the beaten eggs and cook, stirring lightly, until mostly set but still slightly soft. Remove eggs from the pan and set aside.
  3. Cook the chicken: Add another tablespoon of oil to the skillet and add marinated ground chicken. Stir and break the meat into small pieces using a spatula. Cook until the chicken turns golden on the surface, about 3 to 4 minutes.
  4. Sauté aromatics: Add the white parts of the scallions and minced ginger to the chicken. Stir and cook until the ginger turns golden and fragrant, about 1 minute.
  5. Add rice and oil: Add the fluffed jasmine rice along with the remaining tablespoon of vegetable oil. Sprinkle 1/2 teaspoon salt evenly over the rice. Stir well to coat rice grains evenly with oil, breaking up any clumps, and cook for 3 to 4 minutes until the rice is hot and grains are fully separated.
  6. Combine eggs and toast rice: Return the cooked eggs to the pan. Stir constantly while cutting the eggs into small pieces with your spatula. Continue cooking and stirring to toast the rice and blend flavors for another 2 to 3 minutes.
  7. Finish with scallion greens: Turn off the heat and add the green parts of the scallions. Stir gently until the greens are just wilted. Taste and adjust seasoning with additional salt if needed. Serve the fried rice hot as a side dish or light main.

Notes

  • I prefer to leave the eggs slightly undercooked initially so they mix nicely with the rice and create a pleasant texture.
  • To make this dish gluten-free, substitute soy sauce with tamari.
