These classic German waffles feature a light, fluffy texture with a crisp exterior. Made from a simple batter of flour, baking powder, butter, sugar, eggs, vanilla, and water, they are perfect for breakfast or brunch. Serve them fresh off the waffle maker, optionally keeping extras warm and crispy in the oven.

Ingredients

Dry Ingredients

  • 2 3/4 cups (350 g) unbleached all purpose flour
  • 4 teaspoons baking powder (or 1 sachet Dr. Oetker baking powder)

Wet Ingredients

  • 3/4 cup (170 g) butter, softened (1 1/2 sticks)
  • 3/4 cup (150 g) organic cane sugar
  • 3 eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups water, at room temperature

Instructions

  1. Combine dry ingredients: In a medium bowl, whisk together the flour and baking powder. Set aside.
  2. Cream butter and sugar: Place the butter and sugar in the bowl of a stand mixer or a large mixing bowl if using a hand mixer. Cream together on medium-high speed for a few minutes until light and fluffy.
  3. Beat in the eggs and vanilla: Add eggs one at a time, beating to combine after each addition. Stop to scrape down the sides as needed. Mix in the vanilla extract until fully incorporated.
  4. Mix together batter: Add the flour mixture and water to the creamed butter mixture. Beat on low speed until the batter is smooth and well combined.
  5. Cook waffles: Preheat your waffle maker according to manufacturer instructions. Scoop the batter into the preheated waffle maker and cook until the waffles are golden brown and crisp.
  6. Serve: Serve the waffles immediately for the best texture, or keep finished waffles warm in a 200°F (90°C) oven. Arrange them directly on the oven rack or on a wire rack set inside a baking sheet in a single layer to maintain crispness. Avoid stacking them.

Notes

  • Use unbleached all-purpose flour for best texture.
  • Make sure eggs and water are at room temperature to ensure smooth batter.
  • Do not stack waffles while keeping warm, to prevent sogginess.
  • Optional toppings include powdered sugar, fresh fruit, syrup or whipped cream.
