Delicious garlic herb roasted potato skins are crispy on the outside and tender on the inside, infused with fragrant herbs and garlic, making them the perfect snack or appetizer. These roasted skins are seasoned with rosemary, thyme, paprika, and Parmesan cheese for an irresistible savory flavor.

Ingredients

Potatoes

  • 4 large russet potatoes

Seasoning

  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Optional Toppings

  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat oven: Preheat your oven to 400°F (205°C) to ensure it is hot enough for roasting the potato skins to a perfect crisp.
  2. Prepare potatoes: Wash and scrub the russet potatoes thoroughly. Pierce each potato several times with a fork. Bake the potatoes directly on the oven rack for approximately 45-60 minutes, or until they are tender when pierced with a fork.
  3. Cool and halve potatoes: Remove the baked potatoes from the oven and allow them to cool until you can handle them safely. Cut each potato in half lengthwise.
  4. Scoop out the flesh: Carefully scoop out the inside of each potato half, leaving about 1/4 inch of potato attached to the skin to provide structure while roasting the skins. Reserve the scooped potato flesh for another use.
  5. Prepare seasoning mixture: In a small bowl, combine olive oil, minced garlic, dried rosemary, dried thyme, paprika, sea salt, and black pepper. Mix well to create a fragrant herb marinade.
  6. Brush potato skins: Generously brush the seasoned olive oil mixture inside each potato skin, making sure to coat them thoroughly for flavor and to help achieve crispiness.
  7. Roast potato skins: Arrange the coated potato skins on a baking sheet lined with parchment paper or foil. Roast in the preheated oven at 400°F (205°C) for 15-20 minutes, or until the skins are crisp and golden brown.
  8. Add Parmesan cheese (optional): During the last 5 minutes of roasting, sprinkle the grated Parmesan cheese over the potato skins and return to the oven to melt and brown slightly for extra flavor and texture.
  9. Garnish and serve: Remove the potato skins from the oven and garnish with freshly chopped parsley if desired. Serve warm as a savory appetizer or side dish.

Notes

  • You can save the scooped potato flesh to make mashed potatoes or add to soups.
  • Adjust the amount of garlic and herbs based on your preference for a stronger or milder flavor.
  • For extra crispiness, try broiling the potato skins for 1-2 minutes at the end of roasting, but watch closely to prevent burning.
  • Parmesan cheese can be omitted for a dairy-free option.
  • Russet potatoes are preferred due to their firm skin and starchy interior, which crisps well.
