For the Steak

  • ¼ cup ghee or butter, remaining amount from divided ¼ cup
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes
  • Salt and ground black pepper, to taste
  • Additional minced garlic (optional, if desired for steak)

Instructions

  1. Prepare the Potatoes: Heat half of the ghee or butter and olive oil in a large skillet over medium heat. Add the cubed Yukon gold potatoes, minced garlic, dried thyme, dried oregano, sea salt, and ground black pepper. Cook, stirring occasionally, until the potatoes are golden and crispy on the outside and tender inside, about 15-20 minutes. Remove the potatoes from the skillet and set aside.
  2. Cook the Steak Bites: In the same skillet, add the remaining ghee or butter and let it melt over medium-high heat. Season the sirloin steak cubes with salt and pepper. Add the steak bites to the skillet in a single layer, making sure not to overcrowd them. Cook for about 2-3 minutes per side until nicely browned and cooked to your preferred doneness. Optionally, add additional minced garlic during the last minute for extra flavor.
  3. Combine and Serve: Return the cooked potatoes to the skillet with the steak bites and toss gently to combine and warm through for 1-2 minutes. Adjust seasoning with additional salt and pepper to taste. Serve immediately while hot, garnished if desired with fresh parsley or a squeeze of lemon for brightness.
