Perfect for a weeknight dinner or an impressive appetizer, it combines simple ingredients with straightforward cooking methods to deliver a restaurant-quality meal in just 20 minutes.

Ingredients

Shrimp

  • 1 1/2 pounds medium shrimp (peeled and deveined)
  • Kosher salt and freshly ground black pepper, to taste

Garlic Butter Sauce

  • 8 tablespoons unsalted butter (divided)
  • 5 cloves garlic (minced)
  • 1/4 cup chicken stock
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons chopped fresh parsley leaves

Instructions

  1. Season Shrimp: Season the peeled and deveined shrimp with kosher salt and freshly ground black pepper according to your taste preferences.
  2. Cook Shrimp: Melt 2 tablespoons of unsalted butter in a large cast iron skillet over medium-high heat. Add the shrimp in batches to avoid overcrowding, cooking and stirring occasionally until the shrimp turn pink and opaque, about 2 to 3 minutes. Remove the shrimp from the skillet and set aside.
  3. Sauté Garlic: In the same skillet, add the minced garlic and sauté until fragrant, approximately 1 minute, making sure not to burn the garlic.
  4. Add Liquids: Stir in the chicken stock and freshly squeezed lemon juice. Bring the mixture to a boil, then reduce heat and let it simmer until the liquid reduces by half, about 1 to 2 minutes, concentrating the flavors.
  5. Incorporate Butter: Gradually stir in the remaining 6 tablespoons of butter, adding 1 tablespoon at a time. Stir continuously until the butter melts fully and the sauce is smooth and creamy.
  6. Combine Shrimp and Sauce: Return the cooked shrimp to the skillet and gently toss them in the garlic butter sauce, ensuring each shrimp is well-coated and heated through.
  7. Garnish and Serve: Remove the skillet from heat. Garnish the shrimp with chopped fresh parsley leaves if desired, and serve immediately while hot.

Notes

  • Use fresh shrimp for the best texture and flavor.
  • Adjust garlic quantity based on your preference for pungency.
  • Chicken stock can be substituted with vegetable stock for a lighter flavor.
  • Serve with crusty bread to soak up the garlic butter sauce or over pasta for a complete meal.
  • Do not overcook shrimp to avoid rubbery texture.
