  • 4 1/2 tablespoons unsalted butter

  • 1 tablespoon granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1 cup whole or 2% milk, warmed to 110°F
  • 1 large egg, room temperature

Topping & Finishing

  • 1 beaten egg, for brushing the tops

Garlic Butter

  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley
  • Flaky sea salt, for finishing

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, instant yeast, granulated sugar, and fine sea salt. Mix well to distribute the ingredients evenly.
  2. Add Wet Ingredients: In a separate bowl, warm the milk to 110°F and add it to the dry ingredients along with the large egg and softened unsalted butter and minced garlic. Mix either by hand or with a stand mixer fitted with a dough hook until a smooth dough forms.
  3. Knead the Dough: Knead the dough on a lightly floured surface or with your mixer for about 8-10 minutes until the dough is smooth, elastic, and slightly tacky but not sticky.
  4. First Rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place until doubled in size, about 1 hour.
  5. Shape the Rolls: After rising, gently punch down the dough to release the air. Divide the dough into equal portions (typically 12-16 rolls depending on size preferred). Shape each portion into a smooth ball and place them on a baking sheet lined with parchment paper, spacing them slightly apart.
  6. Second Rise: Cover the shaped rolls loosely and allow them to rise again for about 30-45 minutes, or until puffy.
  7. Prepare Garlic Butter: While the rolls undergo their second rise, melt 2 tablespoons of unsalted butter and mix it with 1 tablespoon minced garlic and 1 tablespoon chopped fresh parsley. Set aside.
  8. Brush and Bake: Preheat your oven to 375°F (190°C). Brush the tops of the rolls with the beaten egg for a golden finish. Bake the rolls in the preheated oven for 18-20 minutes or until golden brown and cooked through.
