  • 1 cup Frozen raspberries
  • 1 tbsp Real maple syrup
  • 1/4 cup chia seeds
  • 3-4 tbsp water
  • 1/2 cup granola (for garnish)

Instructions

  1. Prepare Pan: Line a large sheet pan with parchment paper to ensure easy removal of the frozen bark later. Pour the vanilla Greek yogurt into a large mixing bowl and set aside.
  2. Make Raspberry Jam: In a high-powered blender, combine the frozen raspberries, maple syrup, chia seeds, and 3 tablespoons of water. Blend until smooth, adding additional water if necessary, until a jam-like consistency is achieved.
  3. Combine Mixtures: Add the freshly blended raspberry chia jam to the bowl of Greek yogurt and mix thoroughly until the mixture is smooth and evenly combined.
  4. Pour and Spread: Pour the yogurt and jam mixture into the prepared sheet pan. Use a spatula to spread it evenly into a 1/2 to 3/4 inch thick layer. Generously sprinkle the granola over the top as a crunchy garnish.
  5. Freeze: Place the sheet pan in the freezer and let it harden for 1 to 2 hours until the bark is solid.
  6. Cut and Store: Once frozen, remove from the freezer and cut into bite-sized bark pieces. Store the pieces in an airtight container or a ziplock bag in the freezer. Avoid leaving the pieces out at room temperature for too long as they will melt quickly.

Notes

  • You can substitute granola with nuts or seeds if you prefer a different crunch.
  • For a dairy-free version, use coconut or almond-based yogurt instead of Greek yogurt.
