These Frozen Greek Yogurt Peanut Butter Bites with Chocolate Chips are a delicious and wholesome treat that combines creamy Greek yogurt, rich peanut butter, and sweet honey, dipped in a smooth dark chocolate coating. Perfect as a guilt-free snack or dessert, these bite-sized frozen delights are easy to make, customizable, and offer a refreshing blend of textures and flavors.

Ingredients

For the Bites

  • 1 cup plain Greek yogurt (nonfat or full-fat, depending on preference)
  • 1/4 cup creamy peanut butter (or almond butter for a variation)
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (plus extra for topping, optional)

For Coating

  • 1 cup dark chocolate chips (or semi-sweet chocolate chips)
  • 1 teaspoon coconut oil (optional, for smoother melting)

Optional Toppings

  • Crushed peanuts
  • Sea salt flakes
  • Shredded coconut

Instructions

  1. Prepare the Greek yogurt mixture: In a medium bowl, combine the Greek yogurt, peanut butter, honey, and vanilla extract. Stir until the mixture is smooth and well blended. Fold in the mini chocolate chips gently to distribute evenly throughout the mixture.
  2. Shape the bites: Line a baking sheet or tray with parchment paper. Using a spoon or small cookie scoop, drop spoonfuls of the yogurt mixture onto the parchment paper, shaping them into bite-sized rounds. Optionally, sprinkle extra mini chocolate chips on top for added texture and flavor.
  3. Freeze the bites: Place the tray in the freezer and freeze the bites for at least 2 hours, or until they are firm and fully frozen.
  4. Prepare the chocolate coating: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-30 second intervals, stirring thoroughly between each until the chocolate is completely melted and smooth.
  5. Coat the frozen bites: Remove the yogurt bites from the freezer. Using a fork or dipping tool, dip each frozen bite into the melted chocolate to fully coat it. Return the coated bites to the parchment-lined tray quickly to prevent melting.
  6. Add optional toppings: Immediately after dipping, sprinkle crushed peanuts, sea salt flakes, or shredded coconut onto the chocolate coating for added flavor and decoration.
  7. Final freeze: Return the chocolate-coated bites to the freezer and freeze for an additional 30 minutes to 1 hour to allow the chocolate coating to harden completely before serving.

Notes

  • You can substitute peanut butter with almond butter or any other nut or seed butter for different flavor profiles.
  • For a vegan version, use maple syrup instead of honey and choose dairy-free yogurt and chocolate chips.
  • If you prefer a smoother chocolate coating, coconut oil helps in melting and creates a glossy finish.
  • Store the bites in an airtight container in the freezer to maintain freshness and texture.
  • These bites make a great portable snack but keep them frozen until just before eating to prevent melting.
