Instructions

  1. Prepare Zucchini: Rinse and pat the zucchini dry. Slice it into even rounds about 1/4-inch thick. Arrange the slices on a few layers of paper towels and sprinkle them generously with salt. Let them sit for 5 to 10 minutes to draw out excess moisture.
  2. Set Up Breading Stations: Prepare three separate bowls. In the first bowl, combine the breadcrumbs and Italian seasoning. In the second bowl, mix the all-purpose flour and shredded Parmesan cheese. In the third bowl, beat the egg with 1 tablespoon of water to create an egg wash.
  3. Coat the Zucchini: Pat the zucchini slices dry using paper towels to remove the moisture drawn out earlier. Take each slice and first coat it evenly with the flour-Parmesan mixture. Then dip it into the egg wash, followed by dredging it thoroughly in the breadcrumb mixture, making sure the slices are evenly coated.
  4. Fry the Bites: Heat oil in a large skillet over medium-high heat. Once the oil is hot (around 350°F/175°C), fry the breaded zucchini slices in batches, avoiding overcrowding. Cook each side for about 1 to 2 minutes until they turn golden brown and crispy. Remove and drain on paper towels to remove excess oil.
