Ingredients

For the Breadcrumb Topping

  • 2 Tbsp butter
  • 3/4 cup panko breadcrumbs

For the Dip

  • 1 1/2 cups sour cream
  • 1 1/2 cups cream cheese (softened)
  • 1 pkg ranch seasoning (about 1 oz)
  • 2 Tbsp pickle juice
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup dill pickles (finely diced)
  • 1 Tbsp fresh dill, chopped

Instructions

  1. Toast the Breadcrumbs: In a medium to large skillet over medium heat, melt the butter. Once melted, add the panko breadcrumbs and cook them, stirring frequently, until they become golden brown and toasted. Remove from heat and set aside to cool.
  2. Prepare the Dip Base: In a large bowl, combine the sour cream, softened cream cheese, ranch seasoning, pickle juice, garlic powder, onion powder, salt, and black pepper. Use an electric hand mixer to blend all ingredients until the mixture is smooth and creamy, about 5 minutes.
  3. Dry the Pickles: Pat the finely diced dill pickles dry with a paper towel to remove any excess moisture, ensuring the dip doesn't become watery.
  4. Combine Ingredients: Gently fold the dried pickles and chopped fresh dill into the smooth dip mixture. Then fold in about two-thirds of the toasted breadcrumbs to incorporate some crunch inside the dip.
  5. Garnish and Serve: Transfer the dip into a serving bowl. Garnish the top with the remaining toasted breadcrumbs, a few additional pickle pieces, and a sprinkle of fresh dill. Serve immediately and enjoy!
