Fresh Mint Meadow Tea is a refreshing, homemade herbal iced tea made with fresh mint leaves and stems, gently boiled and sweetened to taste. This cooling beverage is perfect for warm days and offers a bright, minty flavor with a natural sweetness, served chilled over ice.

Ingredients

Fresh Mint Tea Base

  • 2 cups fresh mint tea leaves and stems
  • 3 to 4 cups water

Sweetener

  • 1 cup sugar (or equivalent sweetener such as agave syrup or Swerve sweetener)

Chilling

  • 1/2 to 1/3 gallon ice
  • Cold water (to fill the gallon pitcher after adding tea and ice)

Instructions

  1. Prepare the mint: Trim off any undesirable leaves, seed heads, or hard, woody, dried-out stems from the fresh mint. This ensures the tea will have a clean, fresh flavor without bitterness.
  2. Rinse the mint: Place the mint in a strainer and rinse thoroughly with cool water to remove any dirt or impurities.
  3. Steep the mint: Transfer the rinsed mint to a medium 1–2-quart saucepan and add 3 to 4 cups of water. Gently press the leaves down into the water to submerge as much of the mint as possible.
  4. Heat the tea: Place the saucepan on the stovetop over medium-high heat. Cover the saucepan and bring the water to a full boil.
  5. Cool the infusion: Once boiling, turn off the burner and remove the saucepan from heat. Keep it covered and let the mint steep in the hot water as it cools for about one hour to extract the flavor fully.
  6. Remove mint leaves: Use a slotted spoon to scoop out the mint leaves and stems from the pot, leaving the infused water behind.
  7. Add sweetener: Stir in 1 cup of sugar or your preferred sweetener into the warm mint infusion until completely dissolved.
  8. Strain the tea (optional): If the tea has a lot of small particles from the leaves and stems floating in it, pour the liquid through a fine mesh strainer for clarity. If you prefer a rustic texture, this step can be skipped.
  9. Chill the tea: Fill a 1-gallon pitcher half to two-thirds full with ice. Pour the fresh mint tea over the ice and stir to cool the tea rapidly.
  10. Finish and serve: Add cold water to fill the gallon pitcher completely and give the tea a final stir. Serve chilled and enjoy this refreshing minty beverage.

  • You can substitute sugar with agave syrup, Swerve, or another sweetener of your choice for a healthier or low-calorie option.
  • Adjust the amount of sugar to your taste for a sweeter or less sweet tea.
