Ingredients

Cookie Dough

  • 2 cups all-purpose flour
  • ¼ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon instant espresso powder
  • 1 teaspoon hot water
  • ¾ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 (3.56 oz) package instant chocolate pudding mix (dry)

Mousse Filling

  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 8 ounces cream cheese, softened
  • ¾ cup semi-sweet chocolate chips
  • 2 tablespoons heavy cream (for melting chocolate)

Chocolate Ganache

  • 2 ounces semi-sweet chocolate chips
  • ¼ cup heavy cream

Instructions

  1. Make the Dough: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt until combined. In a small bowl, dissolve the instant espresso powder in hot water. In the stand mixer with paddle attachment, cream softened butter until smooth. Add both sugars and mix on high for 3 minutes until light and fluffy. Incorporate eggs one at a time, mixing after each. Add vanilla and espresso mixture, then stir in the instant chocolate pudding mix. Gradually add flour mixture on low speed until incorporated.
  2. Bake the Cookies: Preheat oven to 350ºF (175ºC) and line baking sheets with parchment paper. Shape dough into balls and place them spaced on the sheets. Gently flatten each ball to about 3/4 inch thickness. Bake for 8-10 minutes until set but still soft. Cool on sheets for 2 minutes, then press the bottom of a glass or cup into each cookie center to create an indentation. Transfer to a cooling rack to cool completely.
  3. Prepare the Mousse: In a chilled bowl with whisk attachment, beat 1 cup heavy cream until soft peaks form. Add powdered sugar and beat to stiff peaks. Transfer whipped cream to a separate bowl. Using paddle attachment, beat cream cheese on high until creamy. In a separate bowl, microwave ¾ cup chocolate chips with 2 tablespoons heavy cream in 15-second intervals, stirring until smooth. Add melted chocolate to cream cheese and beat until combined. Fold a third of whipped cream into this mixture then gently fold in remaining whipped cream by hand.
  4. Make the Ganache: Place 2 ounces chocolate chips in a bowl. Heat ¼ cup heavy cream in microwave until just simmering. Pour hot cream over chocolate chips, cover, and let sit a few minutes. Stir until smooth and let cool to room temperature.
  5. Assemble Cookies: Spoon mousse evenly into each cookie indentation, spreading smoothly. Drizzle each with cooled chocolate ganache. Serve immediately or chill briefly for firmer filling. Enjoy your French Silk Pie Cookies!

Notes

  • For best results, chill the mixing bowl and whisk attachment before whipping cream to achieve maximum volume.
  • Do not overbake cookies; they should remain soft when removed from the oven to ensure tender texture.
  • Espresso powder enhances the chocolate flavor but can be omitted if unavailable.
  • Store assembled cookies in the refrigerator and consume within 3 days for optimal freshness.
  • Use high-quality semi-sweet chocolate for a rich and smooth mousse and ganache.
