Instructions

  1. Prepare the onions: Peel and thinly slice the Vidalia onions into rings or half-moons for a tender and flavorful base.
  2. Sauté the onions: In a large saucepan or Dutch oven, heat butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized, about 25-30 minutes, without allowing them to burn.
  3. Add flour and wine: Sprinkle the flour over the caramelized onions and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste, then pour in the dry white or red wine, scraping the bottom of the pot to deglaze and incorporate all flavorful bits.
  4. Add broths and seasoning: Pour in the beef and chicken broths, then add the fresh thyme and bay leaves. Season with salt and pepper according to taste. Bring the soup to a gentle boil, then reduce to low heat and simmer uncovered for about 30-40 minutes to meld flavors.
  5. Prepare the bread topping: While the soup simmers, preheat the oven to 375°F (190°C). Brush French baguette slices lightly with olive oil and toast them in the oven until golden, about 8-10 minutes.
  6. Assemble and serve: Remove bay leaves and thyme sprigs from the soup.
