These Make-Ahead Freezer Breakfast Burritos are perfect for busy mornings, offering a quick, delicious, and healthy breakfast option. By prepping a batch ahead of time, you can enjoy convenient, flavorful burritos packed with eggs, sausage, hash browns, and cheddar cheese, all wrapped in soft flour tortillas. Simply freeze, then reheat for a satisfying meal on-the-go.

Ingredients

Egg Mixture

  • 9 eggs
  • 1/4 cup milk (optional)
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried basil

Other Ingredients

  • 1 pound loose ground sausage, browned and drained
  • 1/2 bag frozen hash brown potatoes (regular or southern-style)
  • 3 cups shredded cheddar cheese
  • 12 flour tortillas (burrito size)

Instructions

  1. Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk (if using), kosher salt, black pepper, and dried basil until fully combined and slightly frothy.
  2. Cook the Sausage: In a skillet over medium heat, brown the ground sausage until fully cooked and no longer pink. Drain any excess fat and set aside.
  3. Cook Hash Browns: In the same skillet or a separate pan, cook the frozen hash brown potatoes according to package instructions until golden and crispy. Drain any excess moisture.
  4. Scramble the Eggs: In a large non-stick skillet over medium heat, pour in the egg mixture and gently cook, stirring often, until soft scrambled and fully cooked. Remove from heat.
  5. Assemble the Burritos: Lay out each flour tortilla flat on a clean surface. Evenly distribute the scrambled eggs, cooked sausage, hash browns, and shredded cheddar cheese across each tortilla, placing the fillings slightly off center to allow easy rolling.
  6. Roll the Burritos: Fold the sides of the tortilla over the filling, then tightly roll from one end to the other, creating a secure burrito.
  7. Wrap for Freezing: Individually wrap each burrito tightly in foil or plastic wrap. Place all wrapped burritos in a freezer-safe bag or container and label with the date.
  8. Reheat to Serve: When ready to eat, remove the foil or plastic wrap, wrap the burrito in a damp paper towel, and microwave on high for 2-3 minutes until heated through. Alternatively, bake in a preheated 350°F oven for about 20 minutes if frozen.

Notes

  • Optional milk in eggs helps make the scramble creamier but can be omitted for a dairy-free option.
  • You can substitute breakfast sausage with ground turkey or omit meat to make these vegetarian (omit sausage and add veggies).
  • For a spicier burrito, add diced jalapeños or a teaspoon of chili powder to the egg mixture.
  • Freeze burritos individually to easily grab and go as needed.
  • Store in the freezer for up to 3 months for best quality.
  • To avoid sogginess, make sure the sausage and hash browns are well-drained before assembling.
