Fish Almondine is a classic pan-seared fish dish featuring tender fillets topped with a rich almond-brown butter sauce. The combination of toasted almonds, browned butter, fresh parsley, and lemon juice creates a nutty, vibrant flavor that perfectly complements the flaky fish. This recipe is quick and elegant, ideal for a gourmet weeknight dinner or a special occasion.

Ingredients

Fish Fillets

  • 2 fish fillets (6-8 oz each), such as branzino, trout, snapper, or black cod, skin on and deboned
  • Salt and pepper, to taste

Cooking

  • 2 tbsp olive oil or a neutral oil
  • 6 tbsp unsalted butter
  • 1/3 cup sliced almonds
  • 2 tbsp minced parsley
  • 1 tbsp lemon juice

Instructions

  1. Season the fillets: Pat the fish fillets dry with a paper towel. Season both sides generously with salt and pepper to enhance the natural flavors of the fish.
  2. Pan-Sear: Heat a large stainless steel skillet over medium-high heat. Once hot, add the oil and tilt the pan to evenly coat the surface. Place the fillets skin-side down in the pan and press gently with a spatula for about 20 seconds to prevent them from curling.
  3. Continue Searing: Reduce the heat to medium and let the fish cook undisturbed until the skin is golden and caramelized around the edges, approximately 2 to 3 minutes. Flip the fillets carefully with a fish spatula and cook for an additional 1 to 2 minutes until fully cooked through. Remove the fillets and set aside on a plate to rest.
  4. Make the Pan Sauce: Lower the heat to medium-low and add the butter to the skillet. Whisk occasionally as it melts and begins to foam. Continue cooking until the butter turns a light golden brown and smells nutty. Add the sliced almonds and cook for about 3 minutes until they are toasted and the butter is golden brown. Take the pan off the heat and stir in the lemon juice, minced parsley, and a pinch of salt.
  5. Serve: Spoon the almond-brown butter sauce over the rested fish fillets. Serve immediately with lemon wedges on the side for extra freshness and acidity.

Notes

  • Use fresh fish fillets with skin on, as the skin crisps up nicely during searing.
  • Be mindful when browning butter; it can burn quickly. Watch for a golden color and nutty aroma.
  • The sauce can be prepared in the same pan used to cook the fish, which adds flavorful browned bits to the sauce.
  • If you prefer, substitute parsley with fresh thyme or chives for a different herbal note.
  • Serve with simple sides like steamed vegetables or rice to keep the focus on the flavorful fish.
